Ise Miso: Aromatic Soybean Miso
The mainstream miso produced in Ise City is soybean miso, made solely from soybeans, following the process of Okazaki Hatcho miso. Soybean miso is made using traditional methods, said to be the origin of miso production, and possesses a unique aroma and rich, complex flavor. Ise miso contains a large amount of soy protein and has the lowest sugar content of all miso varieties.
Koya's miso uses carefully selected whole soybeans and ferments them until fully mature. It's perfect for everyday use, adding flavor to miso soup, stir-fries, miso stewed fish, and curry.
A mild, sweet miso!
White miso is characterized by its creamy color and slightly sweet taste. It is widely used in the Kansai region of Japan. Ise white miso is made from carefully selected Japanese soybeans and rice. It has a shorter fermentation time, lower salt content, mild flavor, and a sweet taste, making it the perfect pairing for seafood dishes!
