Since the Ryukyu Kingdom period, people in Okinawa have been known to brew sweet potato distilled liquor "IMUGE." using sweet potato (Ryukyu sweet potato) and brown sugar. By the late Meiji Era, the government banned individual brewing, and this type of wine was almost extinct during the Taisho Era. In order to pay attention to this IMUGE., which has disappeared for more than a century, four distilleries, including Nakijin Shuzo, have actively challenged themselves to recreate the legendary sweet potato distilled liquor in recent years.

IMUGE. It’s not Awamori and it’s not Shochu.
Sweet potato distilled liquor is defined as distilled liquor (Spirit) under the current Japanese Liquor Tax Law. Different from Awamori’s preparation method , mainly using koji, sweet potato and brown sugar as raw materials , using the normal pressure distillation method can make the wine taste more mellow and the aftertaste is more rich in sweet potato aroma.
