Salted pork (スーチカー) is a traditional Okinawan dish, mainly made from cured pork belly. Before refrigerators existed, pork was preserved by salting, and this practice became popular in Okinawa as a preserved food. Today, it is a widely enjoyed dish in Okinawa, especially as an accompaniment to drinks.

The carefully grilled salted pork is bursting with the aroma of pork! The pork belly is boiled in plenty of hot water to remove excess fat, then carefully seared and seasoned with pork and chicken broth, and a spicy, specially made lime-chili sauce. The salted pork has a slightly spicy flavor, while also offering the unique refreshing taste of Okinawan lime.


Okinawa's healthy and longevity-promoting pork dishes and cooking methods

During the Ryukyu Kingdom period, which had contact with China, pigs were brought to Ryukyu by Ming Dynasty envoys. Later, Ryukyuans raised pigs to entertain Ming Dynasty envoys, and pork dishes were established as court dishes in Ryukyu. They gradually became popular during festivals such as New Year's Day and Bon Festival, becoming a part of everyday life for ordinary people.

Pork belly is primarily made from a piece of meat around the pork ribs. Because it consists of three layers: skin, lean meat, and fat, it is also known as "three-layered meat." During cooking, it is boiled in water for several hours to remove excess salt and fat. Okinawan pork is said to be beneficial to health by removing excess fat through boiling, contributing to the health and longevity of the Okinawan people.
