Purple sweet potatoes are well-known for being perfect for making desserts and are widely used in dessert making. This time, we'll introduce two simple purple sweet potato dessert recipes so you can enjoy the delicious taste of Okinawan purple sweet potatoes at home.

Okinawa purple sweet potato milk

Material:

  • 150g Okinawa purple sweet potato
  • 1/2 cup of apple juice
  • 1 cup of soy milk
  • A pinch of cinnamon powder
  • Sugar as needed


step:

1. Place the Okinawa purple sweet potato in the microwave and heat until the inside is soft (about 2-3 minutes in a 500w microwave).
2. Add the Okinawa purple sweet potato and apple juice from step ① to a food processor and mix well.
3. Whisk the heated soy milk and sugar until it becomes like soft serve.
4. Pour the Okinawa purple sweet potato juice from step ② and the soy milk from step ③ into a cup, add bubbles, and finally sprinkle with cinnamon powder.

Okinawa purple sweet potato truffle chocolate

Material:

  • Okinawa purple sweet potato 250g
  • 150g Japanese red bean paste
  • 30g Japanese soybean flour
  • 2 tablespoons of sesame powder
  • 20g sugar
  • 15-20g of soy milk
  • 15g of chocolate powder


step:

1. Peel the Okinawan purple sweet potato, slice it thinly, and then boil it in water until cooked.
2. Mash the Okinawa purple sweet potato from ①, and add sugar while it's still hot and mix well.
3. Add Japanese red bean paste, Japanese soybean powder, sesame powder and soy milk to ②, and stir until the mixture becomes glossy.
4. Roll the mixture from step ③ into bite-sized balls, and finally sprinkle chocolate powder on the surface.
