Awamori is a distilled spirit produced in Okinawa Prefecture. Spirits are classified according to their manufacturing methods into distilled, brewed, and blended spirits. Brewed spirits are made by adding yeast to the raw materials for fermentation. Distilled spirits are produced by heating and distilling the brewed spirits. Distilled spirits have a higher alcohol content than brewed spirits.

Beer, sake, and wine are brewed beverages, while whiskey, vodka, shochu, and awamori are distilled spirits. Among distilled spirits, awamori has a unique production method. It uses the "whole rice koji method," in which black koji is cultivated in Thai rice, water and yeast are added for fermentation, and finally it is distilled using a single-stage still.

The term "aged sake" refers to awamori sake that has been stored for more than three years. Newly made awamori sake is placed in bottles or jars to allow its components to mature slowly, resulting in fragrant and mellow awamori sake.
